Corn Relish


Corn from Zerns Farm market





Corn Relish

From Ball Blue Book
8 cups cut corn
1 cup chopped onions
1 cup chopped sweet green peppers
1 cup chopped red sweet peppers
4 cups chopped cabbage
2 Tblsp dry mustard
2 Tblsp mustard seed
1 Tblsp celery seed
1 Tblsp salt
4 cups vinegar
1 to 2 cups sugar
1 Tblsp turmeric

Boil corn 5 minutes. Cut from cob. Measure. Peel onions, deseed peppers. Chop and measure cabbage, onions and peppers. Mix all ingredients with 1 cup water. Simmer 20 minutes. Bring to boiling. Pack boiling hot relish into hot Ball Jars.
Process 15 minutes.
