Canned Ketchup (tastes like Heinz ketchup)
35 lbs tomatoes
6 cups white distilled vinegar
4 cups sugar
5 Tbsp salt (omitted this year to reduce sodium)
1 Tbsp citric acid
1 Tbsp onion powder
1/4 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp all-spice
1/4 tsp cayenne pepper
1/3 cup Clearjel
Chop tomatoes and heat in a stock post to soften then run through mill discard skins and seeds.
Cook down tomatoes until thick like paste in trays in oven
Put thickened tomato paste in a stock pot add other ingredients and bring to a boil
process for 10 minutes
