Crispy Pickled Peppers


Crispy Pickled Peppers (Using Pickling Lime)

ingredients 
3lbs peppers
1 cup pickling lime (I used 1/2 cup)
7 1⁄2 cups cider vinegar (5% acidity) ( I use 6 c White and 1 1/2 cider)
1 3⁄4 cups water
2 tablespoons pickling salt
3 tablespoons celery seeds (optional)
6 tablespoons mustard seeds (optional)


directions

  • Slice peppers in 1/4 inch rings.
  • Soak in 1 gallon of water with 1 cup pickling lime 12 - 24 hours ( ideal = 18 hours).
  • Drain & rinse peppers well. Soak in fresh water 1 hour. Repeat this twice more.
  • Bring vinegar, salt & water to full boil. (I added peppers to the brine and boiled )
  • Add 1/2 T celery seed & 1 T mustard seed in sterilized pint jars.
  • Pack with peppers and carefully fill jars, leaving 1/2 inch headspace.
  • Wipe rims, apply lids & rings. Process 10 minutes (if at 1000 foot elevation or lower) in hot water bath.

Yum Yum Pickles


 Ingredients

Combine the following and let stand for 3 hours.

6 quarts of sliced cucumbers

1 quart of sliced onions

4 green peppers

2 red or yellow peppers or a combination of both

½ cup of pickling salt

4 quarts of cold water

At the end of 3 hours, drain and discard water.

Place everything into a large pot.

Add:

6 cups of vinegar

6 cups of sugar

1 tsp of tumeric

1 tsp of celery seed

1 tsp of mustard seed

Instructions

Bring to a boiling point.

Ladle into hot sterilized jars and seal with lids.

Be sure to leave a ½ inch of head space between the pickles and the top of the jar.

Place the jars into the canner and be sure they are covered with a minimum of 2 inches of water. Bring the water to a boil and process for 20 minutes.

Timing begins once the water begins to boil.

Remove all the jars to a rack to cool.

Crunchy Dill pickles


Dill Pickle Recipe:

The pickles need to soak overnight in a brine, then the next day you will fill your jars and process.

Ingredients:

8 pounds of 3-4 inch pickling cucumbers

2 gallons water

1 1/4 cups canning or pickling salt

1 1/2 quarts vinegar (5% acidity)

1/4 cup sugar

2 quarts water

2 Tbsp. whole mixed pickling spice  

whole mustard seed (1-2 tsp per pint jar)

fresh dill (1 to 1 1/2 heads per pint jar) or dill seed (1 to 1 1/2 tsp. per pint jar)

1 garlic clove per jar (optional)

Preparing Your Cucumbers the Day Before

day one, wash your cucumbers and thinly slice off the blossom end. 

Add 3/4 cup salt dissolved in 2 gallons water. Soak cucumbers in water for 12 hours. 


 Dill Pickle Recipe:

Get the water in your canner heating while you prepare your cucumber pickles.


Combine 

1 1/2 quarts vinegar, 

1/2 cup salt, 

1/4 cup sugar

2 quarts of water. 

pickling spices in a cheesecloth bag and place in your vinegar brine.

Heat to boiling.


Fill jars with drained cucumbers.

Add:

12 tsp. mustard seed per pint 2 tsp per quart 

1 pint / 2 quart head fresh dill or 1 tsp. pint / 2 tsp quart. dill seed  

1 garlic clove per jar (optional)

Fill jars with hot pickling brine, leaving a 1/2-inch headspace.

I added pickle crisp 1 1/2 tsp -Quart 3/4 tsp Pint

Low-Temperature Pasteurization Treatment

The following treatment results in a better product texture but must be carefully managed to avoid possible spoilage. Place jars in a canner filled half way with warm (120º to 140º F) water. Then, add hot water to a level 1 inch above jars. Heat the water enough to maintain 180ºF (82.2C) to 185º F (85C) water temperature for 30 minutes. Check with a candy or jelly thermometer to be certain that the water temperature is at least 180ºF during the entire 30 minutes. Temperatures higher than 185ºF may cause unnecessary softening of pickles.

White Grape Jelly

Your Grape Jelly Recipe

FOR EVERY 2 (8 OZ) HALF PINTS, YOU WILL NEED

Grape juice 1 1/2 cups  

Ball RealFruit™ Classic Pectin 2 Tbsp 

Granulated sugar 1 2/3 cups (REDUCED SUGAR) 1 cup

Prepare Your Juice

The following yields 1 1/2 cups of Grape juice.

You will need: 1 1/4 lbs grapes and 1/4 cup + 1 Tbsp water.

1. WASH; crush one layer at a time using a potato masher.

2. PLACE in a saucepan. Cover and simmer 10 minutes.

3. STRAIN mixture through dampened jelly bag or several layers of cheesecloth to extract juice. Let juice drip,

undisturbed, for 2 to 4 hours. Note: Squeezing the jelly bag may cause jelly to be cloudy.

Make Your Jelly

1. PREPARE waterbath canner, jars and lids according to manufacturer's instructions, if preserving.* Prepare and measure ingredients for recipe.

2. COMBINE prepared juice in an 8-quart saucepan. Gradually stir in Ball® RealFruit™ Pectin. Add butter, if using. Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly.

3. ADD entire measure of sugar, stirring to dissolve. Return mixture to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.

4. PACK based on Enjoy Now or Fresh Preserve steps below.

*If you are preserving at an altitude higher than 1,000 feet above sea level, adjust processing time as indicated by the altitude chart (https://www.freshpreserving.com/adjust-high-altitude-canning).

QUICK TIP: Adding up to 1/4 tsp butter or margarine will reduce foaming.

Fresh Preserve

1. LADLE hot jelly/jam into hot jars, one at a time, leaving 1/4-inch headspace. Wipe rims. Center lids on jars. Apply bands and adjust to fingertip tight.

2. PLACE filled jars in canner, ensuring jars are covered by 1 to 2 inches of water. Place lid on canner. Bring water to gentle, steady boil.

3. PROCESS jars for 10 minutes, adjusting for altitude. Turn off heat, remove lid and let jars stand for 5 minutes.

4. REMOVE jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Clean and store jars according to manufacturer's instructions.

Old Fashioned Cucumber Lime Pickles (with Pickling Lime)

Old fashioned lime pickles use pickling lime as a firming agent, which results in the crispest pickles imaginable!

Ingredients

For the Pre-Soak

7 lbs Pickling Cucumbers 3-4 inches long (about 40)

1 cup Pickling Lime

2 Gallons Water plus more to rinse

Pickling Brine

8 Cups White Vinegar 5% Acidity

8 Cups Sugar

1 Tbsp Canning Salt

1 Tbsp Pickling Spice

Instructions

Wash and scrub the pickling cucumbers, and then remove the stems and cut off the blossom ends.

Slice cucumbers into 1/4 inch (or thinner) slices.

Mix the pickling lime in water to create a soaking solution.

Place the cucumber slices into a non-reactive container (glass, ceramic, stainless steel, plastic, etc.). Avoid aluminum or copper containers, as the lime will react with the container, ruining the container and the pickles.

Pour the pickling lime solution over the cucumber slices, and weigh them down with a plate to ensure they're completely submerged.

Soak the cucumbers for about 12 hours, or overnight. Stir occasionally, if possible, to keep the lime evenly distributed in the water.

After the soak, pour off the soaking water and discard. Rinse the cucumbers 3 times in clean water, making sure that you remove all the lime from their surfaces and the container.

Soak the cucumber slices in clean ice water for 3 hours to chill them and remove any last bits of extra pickling lime.

Drain and discard the soaking water.

Prepare a pickling brine by mixing the brine ingredients (vinegar, sugar, etc). Unlike other pickling recipes, the brine should be room temperature at this point.

Pour the room-temperature brine over the prepared cucumber slices and let them stand for about 6 hours, or overnight. Cover to keep out pests, and refrigerate if possible.

After the brine soak, drain the brine into a stock pot (straining out the cucumber slices for now) and bring it to a boil. Turn the heat down to a simmer and simmer the brine (without the cucumbers) for 35 minutes.

While the brine is simmering, prepare a water bath canner by pre-heating it for raw pack (about 140 degrees F) and also prepare jars, lids and rings.

Pack the cucumber slices into prepared jars. They can be packed quite tightly as they'll shrink during canning. Be sure to leave 1/2 inch headspace.

Once the brine has simmered for 35 minutes, pour the brine over the top of the cucumber slices in the jars, maintaining 1/2 inch headspace.

De-bubble the jars, adjust headspace, and seal with 2-part canning lids to finger tight. Load the jars into the pre-heated canner.

Bring the canner up to a full rolling boil, and when boiling, process the jars for 10 minutes (for pints) or 15 minutes (for quarts), adjusting for altitude.

After canning, allow the jars to cool on a towel on the counter to room temperature and check seals. Store any unsealed jars in the refrigerator for short term use, but sealed jars can be stored on the pantry shelf.

Properly canned and sealed jars will maintain peak quality for 12 to 18 months, and be safe to eat so long as they're sealed. Refrigerate after opening. Allow at least 2-3 days after processing before tasting to allow the cucumbers to properly pickle. They'll be best after 2 weeks.

Best Zucchini Relish

Best Zucchini Relish  

A sweet and tangy zucchini relish recipe that's perfect for canning, freezing, or quick refrigerator storage. It's easy to make spicy, scale down for a small batch, or use yellow summer squash. Zucchini relish is delicious with burgers, eggs, hot dogs, tacos, pizza, dips, dressings and more!

Canning supplies including jars, lids, a canning pot, rack, jar lifter, etc.

Measuring cups

Food processor – highly recommended but not required. You could also manually dice the zucchini into very fine pieces, or shred it using a cheese grater.

A large fine-mesh strainer and/or cheesecloth.

Ingredients

  

10 cups zucchini or summer squash - finely chopped, grated or shredded (plan to use about 4 pounds, but still measure cups)

3 cups yellow or white onion, finely chopped or grated (about 2 medium onions)

3 cups red bell pepper, finely chopped or grated (about 3 large bell peppers)

2.5 cups vinegar -  1.5 cups apple cider vinegar and 1 cup white vinegar (ensure it's 5% acid for canning)

2.5 cups white cane sugar

4 Tbsp pickling salt, sea salt or other kosher salt (not iodized table salt)

Spices

2 tsp whole yellow mustard seed

1 tsp celery seed

1 tsp ground turmeric

1/4 tsp nutmeg (or allspice)

1/4 tsp black pepper

Make it Spicy (Optional)

1 or 2 fresh hot chili peppers (e.g. finely chopped jalapeño) OR

1 to 2 tsp red chili flakes

Instructions

 

Prepare the Vegetables

Wash the zucchini and bell peppers well.

Trim the ends off the zucchini (discard) and cut it into large chunks that will easily fit in the food processor. I also like to remove some of seedy, spongy center of the squash as needed.

Working in batches, pulse the zucchini in a food processor until it’s in fine pieces (think of the texture of commercial relish). Or manually dice or grate the squash into approximately 1/8 to 1/4″ pieces.

Measure out 10 cups of processed zucchini into a large non-reactive mixing bowl.

measure out 3 cups of onions, followed by 3 cups of red bell peppers. Add to the same mixing bowl as the zucchini.

Brine and Rinse Veggies

Sprinkle 4 tablespoons of kosher salt over the chopped zucchini, onions and bell pepper and mix thoroughly. Add 1 tbsp at a time and mix as you go to ensure even distribution.

Let the salted vegetables sit for several hours, or for the best results, in the refrigerator overnight. The brining process helps achieve the best zucchini relish texture possible.

Transfer salted vegetable mixture to a large fine-mesh strainer or sieve. I like to line it with organic cotton cheesecloth to rinse, strain, and squeeze the relish mixture with ease. Rinse the zucchini, onions and bell peppers well with water to remove excess salt, and then drain and wring out the water.

Use your hands (and the assistance of the cheesecloth) to squeeze, press, and remove as much liquid as possible. 

Cook the Zucchini Relish

Before cooking the relish, get all your canning supplies ready, including heating the water bath.

Add the strained zucchini mixture to a large non-reactive pot, along with the called-for vinegar, sugar, and spices.

Over medium-high heat, bring the mixture to a rolling boil, stirring occasionally. Then reduce to medium heat and simmer for about 25 to 30 minutes, until most of the liquid has reduced and the zucchini relish has thickened nicely. Stir regularly to ensure it doesn’t burn.

Canning Instructions

Transfer the still-hot zucchini relish into hot sterilized canning jars with the assistance of a clean canning funnel. Leave 1/2-inch of headroom 

Remove air bubbles as needed using a bubble remover or small knife. Use a clean damp paper towel to wipe the rims of the jars clean before adding lids

Add sterilized canning lids and rings. Screw on the rings to finger-tight only, not overly tight.

Use a jar lifter to carefully transfer the jars to your pre-heated water bath canning pot, cover with a lid. The jars should be covered by 2 inches of water. Add more boiling water if needed.

Once the canner returns to a rolling boil, process for 15 minutes. (To adjust for altitude, process 20 minutes at 1000-6000 feet above sea level, and 25 minutes at 6000+ feet.)

When finished, transfer the jars from the canner to a cooling rack and leave them undisturbed for at least 12 hours before checking jar seals. Refrigerate any jars that did not seal.
